Preparation time: 45 min

  • Cut the tomatoes and sausage into small cubes.
  • Heat a pan with olive oil (extra virgin olive oil; no butter) and sauté the rosemary.
  • Then add the onion and sweat it as well.
  • In the original recipe, no garlic and no carrot are added. I, however, now add garlic and carrot.
  • Add the peperoncino, depending on how hot you want it.
  • Add the sausage (you can also use 100 g bacon) and fry them as well. You can also omit meat altogether; I, for example, omit it when I eat meat with Bud Spencer and Terence Hill beans.
  • Deglaze with the white wine and then add the beans.
  • Stir in the tomatoes and three to four spoonfuls of bean juice (from the tins or from the dry beans) or water/vegetable stock.
  • Simmer on low heat for 30 to 60 minutes until the right creamy consistency is reached.
  • Season with salt and pepper and enjoy straight from the pan with a piece of bread and wooden spoon.
  • Buon appetito.


  • Instead of the four large diced fresh tomatoes, you can also use a can of 200 ml strained tomatoes.
    Or 40 g tomato paste and 160 g water/vegetable stock/bean juice.
    Or 200 ml tomato sauce/tomato juice.
  • Add a teaspoon of curcuma to enhance the colour.
  • Instead of tomatoes, you can also use peppers, it is lighter.

Dry beans

If you have dry beans, soak them in water overnight and simmer for about 1.5 hours the next day. Do not pour away the bean juice, it will be used later.
